The booklet measures 5 3/8 x 8 1/2 inches and was produced by Peter C. Martini of the Bahamas Hotel Training Council. There is 27 pages. Each recipe has a color picture and mentions substitutes for ingredients that are available in the Bahamas but may not be available in your area. This book is not dated but I purchased it on a trip to the Bahamas over 30 years ago! Sorry for the name label inside the front cover! Great recipes from the Bahamas!
